I had a hankerin' for fried eggs and hash browns today. I was out of regular potatoes but had some sweet potatoes I had bought just before Thanksgiving for 25 cents a pound. They were going to go bad, so I made do. They tasted decent with some Cholula hot sauce on them. I ate them all!

ReplyDeleteIf by "opportunity", you mean my unemployment, I can tell it is going well. And by going well, I mean I have enough sweet potatoes to keep myself in novelty hash browns well through the new year.
